Avocado is a valuable fruit with high nutritional content. This pear-shaped fruit may be added to various dishes and recipes due to its rich texture and good flavour. The avocado is now extremely popular among health-conscious people because it contains healthy fat, fibre, and a variety of minerals and vitamins including: vitamin C, B5, B6, E, K, and foliate. 1. Avocado and Potato Salad

Here is a quick and easy recipe that should take about 20 minutes to prepare.

2 large ripe Hass avocados, peeled and cut into half-inch pieces
4 sliced green onions
3/4 teaspoon salt
3/4 teaspoon ground black pepper
2 teaspoons Dijon-style mustard
5 teaspoons cider vinegar
1 cup of low-fat mayonnaise
2 pounds of red potatoes, diced into 1-inch cubes

a. Put the potatoes in a mid-sized saucepan and cover with water. Boil the water then cook the potatoes for 15 minutes. The potatoes should be tender when you pierce them with a fork.
b. Drain the water and pour it into a bowl.
c. Combine the mustard, vinegar, mayonnaise, salt and pepper to make the dressing
d. Add the dressing and the green onions to the potatoes and toss gently.
e. Stir in your avocados
f. Refrigerate it for about 4 hours or leave it in the refrigerator overnight so the flavours can mix together.

2. Vegetable and Avocado Sauté Recipe

This is a colourful and tasty blend of zucchini, bell pepper and fresh avocado.

1 large ripe fresh avocado, peeled and sliced into chunks
1 1/2 tablespoons of fresh lemon juice
1 tablespoon of grated lemon peels
1/2 red bell pepper, diced into one-inch squares
3 zucchini, sliced into two lengthwise and then cut one quarter-inch thick
1/2 tablespoon of fresh thyme leaves
1/2 large shallot, chopped into tiny pieces
2 teaspoons of finely cut garlic
1 1/2 tablespoons of olive oil or avocado oil

a. Heat the oil on medium heat in a large skillet.
b. Add garlic, thyme and shallot, sauté for 3 minutes
c. Add bell pepper, zucchini and lemon peel, cook and stir for 2 minutes
d. Reduce the heat, cover it and cook for about 3 minutes
f. Pick the best avocado chunks and mix them with lemon juice in a small bowl
g. Add the avocado mixture to the skillet and mix gently.
h. Cook for at least 2 minutes so the flavours can blend together.

3. Avocado and Tortilla Soup

Here is a recipe for warm Mexican tortilla soup made from lime juice, avocado, tortilla strips and queso fresco cheese.

2 limes, cut into quarters
2 cups of crumbled queso fresco cheese
2 ripe, fresh avocados, peeled and cut into cubes
10 corn tortillas, cut in strips
Vegetable oil for frying
1/2 teaspoon of red pepper and salt
1/4 cup of coarsely cut cilantro leaves
3 pints of chicken broth
1 can of diced tomatoes in juice
1 tablespoon of olive oil
3 cloves of roasted garlic
1/2 cup of minced onions

a. Sauté the garlic and onion in oil for about 2 minutes so the onion becomes transparent.
b. Put the sautéed mixture and tomato juice in your blender and blend it for 40 seconds.
c. Combine the seasoned salt, cilantro, chicken broth and purée mixture in a stockpot.
d. Bring the mixture to boil, reduce the heat and let it simmer for 10 more minutes.
e. Heat half-an-inch of oil in a saucepan.
f. Add the tortilla strips in batches and fry for about 2 minutes, turn them once until they are golden brown.
g. Remove the tortilla from the oil and drain off the oil on paper towels.
h. Put the same quantity of fried tortilla strips in soup bowls.
i. Pour the hot soup on it and garnish with avocado, lime juice and cheese.
