Quick and Healthy Recipes for Moving Day

It’s finally the big move. Months of planning, boxes and stress have all built up to this one day. It’s only when you’ve finished unloading everything into your new home that you notice your stomach has been rumbling for most of the day. With all of your plates and appliances still waiting to be unpacked it’s almost too easy to go for the unhealthy option of ordering from the local take away and sitting on your new floor surrounded by boxes. Moving day doesn’t have to be that way. There are thousands of no cook, simple recipes out there that are quick and healthy, allowing you the time you need to unpack whilst providing you with enough fuel for the day. We’ve gathered together a handful of quick and healthy recipes perfect for moving day.


Breakfast & Brunch

Overnight oats
The beauty of this recipe is that you prepare it the day before, giving you one less thing to worry about the morning of your big move.

110ml of milk
47g of rolled oats
½ a mashed banana
30g of chopped nuts (optional)
Pinch of cinnamon (optional)

Mix together milk, rolled oats and the mashed banana in a microwave-safe container. Add the optional chopped nuts and a pinch of cinnamon for extra flavouring and leave overnight. If you prefer a warm breakfast (and the microwave is readily available), you can heat up your overnight oats in the microwave for 1-2 minutes. It really is as easy as that!

Yogurt parfait
This simple yogurt parfait recipe can be prepared a few days before moving day and comes from food and travel writer Stephanie Arsenault. Her on-the-go recipe will keep you fuelled up until lunchtime, making it an excellent breakfast choice for moving day!

½ cup plain Greek yogurt
¼ teaspoon vanilla extract
1 tablespoon of milk
1 teaspoon chia seeds
1 tablespoon peanut butter

A handful of fresh berries
2 tablespoons of large flake oats
1 tablespoon of mixed nuts and seeds (optional)

Mix together the yogurt, vanilla extract and chia seeds in a small bowl. Put your spoonful of peanut butter into a separate container or jar and spread the peanut butter evenly. Pour half of the yogurt mixture from earlier on top of the nut butter and add half of the berries and oats. Repeat this step by pouring the remaining yogurt mixture into the container and adding the remaining berries and nuts. Add the optional nuts and seeds to this layer if you wish to use them. Finally, add the milk.

Lunch & Dinner

Herbed cheese and tomato bagels
These low-fat, high protein sandwiches are just what you need on moving day. A no fuss, no mess meal that will keep you fuelled until the very last box has been unpacked.

2 whole-grain or white bagels
60grams of low-fat cottage cheese
4 tomato slices
¼ avocado
Chopped chives
A pinch of garlic salt, salt and pepper for seasoning

It is probably best that you prepare this lunch before moving day, although it’s not completely necessary.  In a bowl, mix together the low-fat cottage cheese, garlic salt, salt and pepper. Cut the bagels in half and spread the cottage-cheese mixture onto the bottom half of the bagels. Add the slices of tomato and avocado on top of the spread and fix the other half of the bagel on top.  Enjoy with a fruit snack such as a banana or orange for a fulfilling and high protein lunch.

Dump and bake Italian chicken and rice
This Italian bake can be tossed together quite quickly and only requires the one dish, making it the ideal moving day dinner with minimum preparation and minimum washing up afterwards. You will need access to your oven for this one.

1 can of diced tomatoes
1 jar of tomato and basil pasta sauce
A handful of mozzarella
A handful of parmesan
1 packet of skinless chicken breasts
1 packet of white rice
Italian seasoning

Preheat your oven to 375 degrees F, 190 degrees C or gas mark 5. Stir together the pasta sauce, tomatoes and rice in a baking dish. Add the chicken on top. If your chicken breasts are quite large you may want to dice them up first. Sprinkle the chicken with the Italian seasoning and cover the baking dish with tin foil. Bake in the oven for 40 minutes. Remove the foil and cover the dish in mozzarella and parmesan and bake for an extra five minutes until the cheese has melted.
